INTRODUCTION:


WHO IS A GHANANIAN? A Ghananian is someone who comes from a Sub-Saharian West African country called GHANA.


The country GHANA is located between Baukina-Faso in the north, La Cote De Voir in the west, Togo in the east, and the Sea (Gulf of Guinea) in the south.


Ghananians like any other poeple from different other countries have so many types of food and so many different ways of preparing them.


LIST OF SOME OF THE GHANANIAN FOODS

1. FUFU ' PLANTAIN OR COCOYAM (with soup)

2. BANKU(with pepper and fish or soup)

3. DOKONO 'KENKEY'(with pepper, shito and fish)

4. AMPESI 'COOKED YAM, COCOYAM OR PLANTAIN(RIPE OR GREEN)(with stew)

5. JOLOFF RICE

6. GARI AND BEANS(with palm oil)

7. WAAKYE 'RICE COOKED IN BEANS' (with stew)

8. HAUSA KOKO (with koose)

9. RED-RED

10. FRIED YAM (pepper and fish) and the last

11.KONKONTE or LAPEEWA (with groundnut soup)"

PREPARATION
1. FUFU "PLANTAIN OR COCOYAM" (with soup):- There are two(2) main ways of preparing "fufu". The indiginous Ghananian "fufu"eater prefers their "fufu" being pounded with mortal and pistel. In this way, you peel either plantain or cocoyam and cook with cassava tii well boiled (ie) do not over-cook. The cooked plantain or cocoyam and cassava is allowed to cool down. Then with mortal and pistle you pound plantain or cocoyam with cassava together tii well mixed.

Now mould the 'fufu' into round balls and eat with soup. There are so many types of soups you can eat with 'fufu'. Examples are light soup, groundnut soup, palm-nut soup. I will come to preparations of soups later.
